The panettone is a typical cake of Milanese origins that has become essential during the Christmas festivities throughout Italy. The story goes that the panettone was born from the love of two young people, opposed due to their class differences. The girl, Adalgisa, was the daughter of a baker, and her lover was a falconer of Ludovico il Moro, named Ugo. The events took place at the end of the 15th century. The young man thought of a way to gain consent for their marriage and avoid meeting his beloved in secret. To be close to the girl, he got a job as an apprentice with the baker Toni and, to improve the bakery's fortunes, he decided to create a completely new bread. He sold some falcons to obtain butter and added eggs, dried raisins, and candied citrus fruits to the bread dough. From Corso Magenta, the news of the delicacy of the "Pan del Ton" spread throughout Milan. Customers increased, creating a long queue, while Christmas was approaching. Business began to improve for baker Toni, and the young couple could fulfil their dream of love. Other legends are linked to the birth of the panettone, but it is certain that it was an enriched and sweetened bread already present in the 1200s around Milan. It was a tastier bread than the one eaten daily to brighten the tables. The very name "augmentative" indicated a larger bread compared to the usual. In the correspondence of the Sforza family, there is mention of the tradition of this bread, which refers to the so-called "ritual of the log" that took place on Christmas Eve, when the head of the family would share slices of wheat bread with the guests, and one would be kept for the following year. All the ovens in Milan at least until the end of the 1300s baked this bread to give away on Christmas.
