Carob Flour: A Mediterranean Treasure
Carob flour, obtained from the processing of the pods of the carob tree, is an ingredient with a sweet and enveloping flavour, used

The Two Faces of Carob: the Characteristics of Pod Flour and Seed Flour
The production process of these flours begins with the harvesting of ripe pods, which are dried in the sun. Carob pod flour is obtained by grinding the dried pulp, transforming it into a light brown powder, naturally sweet and with a flavour reminiscent of chocolate, but with a more delicate and less bitter aromatic profile. Thanks to these characteristics, it is often used as a substitute for cocoa in sweets, biscuits, and beverages. Carob seed flour, also known as carob gum, is instead derived from grinding the seeds contained in the pods. This flour is less sweet than pod flour and is particularly valued for its excellent gelling and emulsifying properties, making it ideal as a thickener and stabiliser in ice creams, creams, and sauces. From a nutritional standpoint, both carob flours are rich in dietary fibre, vitamins (such as vitamin E and some B vitamins), and minerals (including calcium, magnesium, and potassium). They are naturally gluten-free, making them suitable for those suffering from coeliac disease or gluten intolerance. Furthermore, they are low in fat and caffeine-free, representing an ideal substitute for cocoa for those seeking lighter or less stimulating alternatives. Understanding these differences allows one to choose the type of carob flour most suitable for their culinary needs, making the most of the properties of each variant.[/vc_column_text][/vc_column][/vc_row][vc_row][vc_column][vc_column_text]Culinary Uses
Carob pod flour can be used as a sweetener in many recipes, reducing the need to add refined sugars. It is particularly suitable for preparing sweets such as cakes, biscuits, and creams, and can be used as a partial or total substitute for cocoa powder, offering a less bitter and caffeine-free alternative. For example, it is ideal for making a chocolate cake with a touch of natural sweetness or lighter wholemeal biscuits. Carob seed flour, on the other hand, is less sweet and is mainly used for its excellent thickening and stabilising properties. This flour is perfect for making creamy ice creams, velvety puddings, and smooth sauces, without altering the original flavour of the ingredients. For instance, it can be used to stabilise a panna cotta or thicken a fruit sauce for cheesecake. Both flours can be added to smoothies and beverages for an extra nutritional boost and a rich, natural flavour.Health Benefits
Consuming carob flour offers several health benefits. Being rich in fibre, it contributes to the proper functioning of the digestive system, helping to prevent issues such as constipation. The fibres present in carob are also useful in controlling cholesterol, as they help to reduce levels of "bad" cholesterol (LDL) in the blood. Carob flour is also indicated for people suffering from gastroesophageal reflux, thanks to its alkalising properties that help neutralise gastric acidity. Additionally, it is considered a hypoallergenic food, making it a safe choice for those with food allergies. With its unique nutritional profile and numerous health benefits, it represents a valid alternative to more common ingredients like cocoa, especially for those seeking healthier and more natural options.[/vc_column_text][/vc_column][/vc_row][vc_row][vc_column][vc_column_text]An Excellent Product for Your Sweet Recipes
