- Fresh yeast 12g
- Oil 10ml

The first step to prepare our pizza dough with durum wheat flour is to get a bowl in which we will combine the two flours. Next, it will be necessary to crumble the fresh yeast into the same container. The original Bonci recipe calls for only 3g of yeast, but this would require a really long rising time. Then, we will need to gradually pour in the cold water. Bonci specifically recommends using water from the fridge. Once this is done, we should start kneading with our hands to perfectly combine the ingredients. Once the dough has absorbed all the water, we can pour in the oil and add the salt, continuing to knead until we obtain an elastic, smooth, and soft mixture. Additionally, if necessary, more water can be added to the dough, depending on the humidity of the flour.Rising and Baking
Once the optimal consistency of our dough is achieved, we can place it back in the bowl and cover it with some cling film. This should rise for about two hours, until it doubles in volume. Once the pizza dough with durum wheat flour is ready, we will need to divide it into pieces of about 200/250g. Then, we should place them on the work surface and let them rise for about 30 minutes, covering them with a cloth. After 30 minutes, we can start rolling out our dough with our hands or a rolling pin. Once this is done, we can spread the tomato and mozzarella on the pizza.
