A delightful and nutritious dish
- 250 g Type 00 Flour
- 50 g Semolina Flour
- 10 g Dried Nettle
- 3 Eggs
- 1 pinch Salt
Sift the flours and place them in a large bowl along with the dried nettle, forming a well in the centre. (We recommend keeping some flour aside to add as needed.)
Add the eggs and a pinch of salt.
Mix the eggs well with a fork and start incorporating the flour.
As soon as the eggs are absorbed, pour the mixture onto a floured wooden surface and knead by hand for about 10 minutes until you obtain a smooth and elastic dough.
Wrap the dough in cling film and let it rest for about 30 minutes at room temperature.
Cut a piece of the dough, making sure to keep the remaining dough wrapped in cling film so it doesn't dry out. Roll it out with a rolling pin on a floured surface or use a pasta machine until you obtain a thin sheet.
Cut the pasta into strips about 1 cm wide and lay the resulting tagliatelle on a wooden board dusted with semolina. We recommend using a sharp, smooth-bladed knife.
Cook the nettle tagliatelle in plenty of salted water for about 2-3 minutes (or until desired doneness based on the thickness of the pasta).
Season as desired with butter and parmesan or with a light tomato sauce.
