Ten minutes before starting, it is necessary to take the butter out of the fridge to soften it and thus facilitate the mixing of the dough. Next, you will need to grate the zest of a lemon after washing it. At this point, you can sift the flour through a fine sieve and transfer it onto a work surface, creating a well in the centre. Now you need to cut the softened butter into cubes and melt it into the flour by gently pressing with your fingertips. Then add the sugar and mix for a short time with your hands. Add a pinch of salt and the lemon zest you prepared earlier to flavour our biscuits a bit. At this point, start kneading with both hands until you obtain coarse crumbs. Now you can add the eggs and yolks, again using your fingertips, and mix them into the mixture. It is very important to work the dough quickly to avoid overheating it. Once the ingredients are combined, you can shape it into a ball, which you will then wrap in cling film and leave to rest in the fridge for at least 30 minutes.The Shape
After 30 minutes, you will need to dust the work surface with flour and roll out the dough on it. At this point, you should cut pieces of shortcrust pastry and create small strips about 1.5 cm in diameter. From these, you should cut pieces of 6-7 cm that you will shape to form the witch's fingers. To do this, you will need to slightly flatten the tips of the pieces to create the space for the nail. With a knife, you will need to make small cuts to create the folds of skin that form on the knuckles. At this point, you will need to place a whole almond on the tip of each finger, pressing lightly. Once this is done, you will need to dust the biscuits with sugar and arrange them on a buttered and floured baking tray. Alternatively, you can simply line it with parchment paper. Finally, the witch's fingers can be baked at about 180°C for 10 minutes. And now for the final touch, which will make our biscuits truly scary. In a small saucepan, you will need to dilute the jam with a tiny bit of water to create the fake blood. With this, once the biscuits are cooked, you can finish the fingers using a brush.
