When we talk about Green Cuisine, we are referring to something deeper than just a way of cooking. Imagine sitting with a friend over a cup of coffee, chatting about the wonders of nature and the nourishing power of plant-based foods. It’s a fascinating journey into the world of vegan recipes, where every ingredient tells a story and every dish is a work of art.
A World of Plant Flavours
Have you ever noticed how nature offers us so many wonders? Just think of the vibrant colours of fresh vegetables and the sweetness of seasonal fruits. Isn’t it incredible? Green Cuisine invites us to explore these gifts from the earth and transform them into simple yet extraordinary dishes, perfect for any occasion. It doesn’t matter if you’re hosting a dinner with friends, having a picnic in the park, or simply treating yourself after a long day: there are vegan recipes for every moment!
Imagine preparing a lovely creamy and fragrant mushroom risotto. The base of this dish is quality rice, such as Arborio or Carnaroli, which must be cooked slowly to release its starch and become soft. The secret? Use homemade vegetable broth, rich and flavourful. Just boil carrots, onion, and celery in water for a few hours, and you’ll get a treasure of flavour!
But let’s move on, because we don’t want to dwell too long. I want to share with you some of my favourite recipes, which are not only delicious but also easy to prepare.
Easy Recipes to Try
1. Quinoa and Crunchy Vegetable Salad
This salad is a real snack and perfect for any season. Quinoa is a gluten-free grain, rich in protein and fibre, and its small white, red, or black pearls make it visually appealing. Making it is a piece of cake!
Ingredients:
- 200 g of quinoa
- 1 cucumber
- 1 red bell pepper
- 1 carrot
- A handful of fresh parsley
- Juice of 1 lemon
- 3 tablespoons of extra virgin olive oil
- Salt and pepper to taste
Method:
- Cook the quinoa in plenty of salted water for about 15 minutes. Drain and let cool.
- Meanwhile, chop the vegetables into cubes and chop the parsley.
- In a large bowl, mix the quinoa with the vegetables, lemon juice, oil, salt, and pepper.
- Serve chilled and watch it disappear in the blink of an eye! ????
Have you ever felt light and full of energy after such a meal? This dish is the perfect balance of nutrients, and its flavour is a symphony of freshness.
2. Lentil Meatballs
These meatballs are the ultimate comfort food, but without meat! Lentils are a fantastic source of protein and iron; in fact, 100 g of cooked lentils provide about 9 g of protein. And then, shall we talk about how fun it is to make them?
Ingredients:
- 300 g of cooked lentils
- 100 g of breadcrumbs
- 1 onion
- 2 cloves of garlic
- 1 tablespoon of soy sauce
- Spices to taste (cumin, paprika, parsley)
- Oil for frying
Method:
- In a mixer, combine the lentils, onion, garlic, breadcrumbs, and spices. Blend until you get a smooth mixture.
- Form meatballs and brown them in a pan with a drizzle of oil until golden.
- Serve them hot with a tomato-based sauce or plant-based yogurt.
Wouldn’t it be amazing to serve these meatballs to your friends and see them surprised by the rich flavours and texture? And the best part is that you can customise them: add olives, nuts, or even plant-based cheese to make them even more delicious!
3. Vegan Apple Cake
And to finish on a sweet note, I want to talk to you about a fantastic and simple cake to make. Apple cakes take us back in time, to when our grandmothers baked fragrant sweets in the kitchen.
Ingredients:
- 250 g of wholemeal flour
- 150 g of brown sugar
- 100 ml of plant-based milk
- 80 ml of seed oil
- 2 large apples
- 1 packet of baking powder
- Cinnamon to taste
Method:
- In a bowl, mix the flour, sugar, and baking powder.
- Add the oil and milk, and mix until you get a smooth batter.
- Peel and slice the apples, add them to the batter, and sprinkle with cinnamon.
- Pour into a baking tin and bake in the oven at 180° for about 30-35 minutes.
Every bite is a hug of sweetness and warmth. There’s nothing like a slice of homemade cake to lift the spirits!
Sustainability and Love for the Planet
Beyond taste and health, Green Cuisine has another incredible dimension: sustainability! Choosing to eat vegan is a choice that benefits not only ourselves but also our planet. The production of plant-based foods generally requires fewer resources than animal-based ones. Did you know that, according to some studies, it takes about 15,000 litres of water to produce 1 kg of meat? ????????
Instead, think about what we can get from a simple garden: tomatoes, zucchini, basil... all with very little water consumption! Wouldn’t it be wonderful to grow your own vegetables? Imagine having a garden on your balcony, where every plant is a small victory.
