Cookies are traditional American biscuits with chocolate chips. They are so quick and easy to prepare that it’s one of the most fun recipes to make with children of all ages. The older ones can help chop the chocolate and measure the ingredients, while the younger ones can mix the dough and form the balls to bake.
Seeing the satisfaction in their eyes as soon as you take these biscuits out of the oven is priceless. And tasting them together while they are still warm is even better!
Our recipe is a reinterpretation of the classic American recipe in a wholesome way. It uses spelt flour (rich in fibre, vitamins, and trace elements), a reduced amount of coconut sugar (compared to the classic doses of granulated sugar), and instead of chocolate chips, we opted for a recycling idea: all the bulk chocolate you have at home or that is left over from the holidays.

with spelt flour and granulated sugar
- 250 g Spelt Flour
- 200 g Dark Chocolate (or other chocolate of your choice)
- 1/2 teaspoon Baking Powder
- 125 g Melted Butter
- 90 g Coconut Sugar
- 1 Egg
Roughly chop the chocolate.
Beat the eggs and sugar in a large bowl until the mixture is light and creamy. At this point, you can incorporate the flour, baking powder, and melted butter.
Finally, add the chopped chocolate or chocolate chips.
Mix vigorously.
Form rough balls the size of a walnut.
Place them well spaced on a baking tray lined with parchment paper.
Bake at 190°C for about 12 minutes.
TIPS
If you don't have spelt flour available, you can grind oats.
If the cookies do not take on the classic flattened shape after 5 minutes of baking, gently flatten them with the back of a spoon.
If you want crunchier and definitely sweeter cookies, you can replace the coconut sugar with white sugar and increase the amount to 150g.
Baking powder can be replaced with half a teaspoon of baking soda.
