Raw Food: the benefits
In modern times, raw food is becoming increasingly fashionable, especially as people prefer a healthy and balanced diet. The Raw Food diet was first created by Swiss doctor Bircher-Benner. He is the inventor of muesli, which cured him of jaundice thanks to a diet based solely on raw apples. Since then, numerous studies have confirmed that raw food is not only tasty and rich in nutrients, but also brings multiple benefits to our bodies.
It is now well known that a food that has not been denatured by heat is extremely beneficial, as it is rich in vitamins and fibre. With the cooking of any type of food, from vegetables to meats, most of the nutrients are lost. Fats oxidise, producing harmful free radicals, and after 45°, enzymes that are extremely important for digestion are also lost.
What is meant by raw food?
Raw foods are all those foods such as fruits, vegetables, seeds, sprouts, and grains that are not heated above 43-45°. Many people decide to switch to this type of diet as they believe that food should not be processed. They completely reject all foods produced by the food industry. Others, however, consume Raw Food because they believe in a return to nature. There are various types of diets that include the consumption of raw food. One of these is, for example, fruitarianism, which involves the consumption of fruits and vegetables, and the vegan diet based on fruits, vegetables, and seeds.
