Green Frittata with Spinach, to Boost Your Vitamins

We now know that in the kitchen, a bit of creativity, combined with excellent ingredients, is enough to invent and reinvent interesting dishes. This is the case with a tasty frittata/pita made with spinach, ideal for enriching the body with vitamins, fibre, potassium, minerals, and iron, making it particularly suitable for those with anaemia. Perfect for coeliacs, due to its consistency, it can become an excellent accompaniment or be filled as desired to become a delicious main dish.
Ingredients:
- 3 egg whites
- fresh spinach or dehydrated spinach
- salt and pepper
- oil
Preparation:
After washing and thoroughly drying the vegetables, place them in a high-sided container and add the other ingredients. Blend everything together with a mixer until you obtain a homogeneous mixture. At this point, pour some oil into a pan, heat it, and only then pour in the mixture. Normally, two to three minutes per side is sufficient to achieve a special pita, simply perfect! At this point, the frittata can be filled as desired, recommended fillings include ham, mozzarella, and fresh cherry tomatoes if in season. It can also be enjoyed simply as is, perhaps accompanied by grilled vegetables or a small salad.
You can also use dehydrated spinach flour, while still maintaining the nutritional properties of the dish.
Alternatively, you can use, while still keeping the dose of vitamins and enzymes present in the vegetables, Bongiovanni dehydrated spinach flour. Produced exclusively from Italian crops, it is very fine and soluble, and can also be used for the preparation of creams, pasta, fillings, and much more conveniently at home. Additionally, it can also be used for the preparation of baked goods where you want to highlight the green colour; this flour is indeed a very intense natural colouring.
To obtain 1 kg of flour like this, a whopping 13.5 kg of fresh spinach is required!
