Flours from artisanal mills are almost always stone-ground, enhancing the flavours of the starting product. This is indeed the oldest technique and still today distinctive in high-quality production. The advantages of this milling come mainly from the slowness with which they are processed and the low temperatures that allow for the best preservation of the precious organoleptic characteristics of the product. No matter how they are processed, they will never reach a total refinement like "00" flour. Therefore, you will have a more "coarse" product and not a pure white colour, but undoubtedly richer.
